DCA introduces benchmark price for Cagliata

DCA Market Intelligence expands its leading portfolio of dairy benchmarks with the introduction of the weekly DCA Benchmark for Cagliata. The first official benchmark for Cagliata was published this Thursday afternoon, January 9, 2025, on its exclusive dairy platform, and is set at €4,510 per ton. 

Cagliata is a semi-soft cheese made from pasteurized cow’s milk, with a fat content of 25-28% and a maximum moisture content of 45%. It is highly valued in the food industry for its versatility. As a semi-finished product, it is used in the production of mozzarella, ricotta, and cottage cheese. Cagliata is also a key ingredient in the production of processed cheese, pizza cheese, and other cheese products that require adaptability and ease of processing. Its consistent quality and diverse applications make it a sought-after product in the food industry.
